“I was inspired to paint this following a photo shoot of my neighbor’s cactus garden. The Prickly Pear Cactus has been a staple food of Native Americans for many centuries. Their large blossoms grow from the tip of cactus nodules, which later ripen into delicious red fruit. Prickly pear juice can be used to make jams, jellies, desserts, or poured on salads. Studies have shown that the pectin contained in the Prickly Pear pulp lowers levels of cholesterol and the fibrous pectin in the fruit may lower diabetics’ need for insulin.”
